Ingredients

For the Pie Crust (or use 1 pre-made double crust):

  • 2 ½ cups (315g) all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup (225g) unsalted butter, cold and cut into cubes
  • 6–8 tbsp ice water

For the Apple Filling:

  • 6–8 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) brown sugar
  • 2 tbsp all-purpose flour
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp butter, cut into small pieces

For the Top:

  • 1 egg (beaten with 1 tbsp water, for egg wash)
  • Extra sugar for sprinkling (optional)

Instructions

1. Make the Pie Crust (if homemade):

  1. In a large bowl, whisk flour, salt, and sugar.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add ice water a tablespoon at a time until dough comes together.
  4. Divide in half, shape into disks, wrap in plastic, and chill for at least 1 hour.

2. Prepare the Apple Filling:

  1. In a large bowl, combine apple slices with sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla.
  2. Toss well and let sit for 15 minutes to develop flavor.

3. Assemble the Pie:

  1. Preheat oven to 425°F (220°C).
  2. Roll out one dough disk into a 12-inch circle. Fit into a 9-inch pie dish.
  3. Fill with apple mixture and dot with butter.
  4. Roll out the second disk and place over filling. Seal and crimp the edges. Cut slits for steam or create a lattice top.
  5. Brush top with egg wash and sprinkle with sugar if desired.

4. Bake the Pie:

  1. Bake at 425°F (220°C) for 20 minutes.
  2. Reduce oven to 375°F (190°C) and bake for 35–45 more minutes, until crust is golden and filling is bubbling.
  3. Cover edges with foil if browning too quickly.

5. Cool and Serve:

  • Let pie cool for at least 2 hours before slicing.
  • Serve warm or at room temperature with vanilla ice cream or whipped cream.

  • Mix tart and sweet apples for balanced flavor.
  • Chill pie before baking to keep crust flaky.
  • Reheat slices in the oven to keep them crisp.
