🍚 Classic Fried Rice Recipe

Ingredients (Serves 3–4)

  • 3 cups cooked rice (preferably cold, day-old rice works best)
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 2 eggs, lightly beaten
  • 1 small onion, finely chopped
  • 2–3 garlic cloves, minced
  • 1 cup mixed vegetables (carrots, peas, corn, bell peppers)
  • 2–3 green onions, chopped
  • 2–3 tbsp soy sauce (adjust to taste)
  • 1 tbsp oyster sauce (optional, for depth of flavor)
  • ½ tsp ground black pepper
  • Salt to taste

Optional Add-ins:

  • Cooked chicken, shrimp, pork, or tofu
  • Chili flakes or sriracha for heat

Instructions

  1. Prep Your Ingredients:
    • Make sure your rice is cold and not clumpy.
    • Have all veggies chopped and ready.
  2. Cook the Eggs:
    • Heat 1 tbsp oil in a large pan or wok over medium heat.
    • Scramble the beaten eggs until just set. Remove and set aside.
  3. Sauté the Aromatics:
    • Add the remaining oil to the pan.
    • Sauté chopped onions for 1–2 minutes, then add garlic and cook until fragrant.
  4. Cook the Veggies:
    • Add the mixed vegetables.
    • Stir-fry for 2–3 minutes until tender-crisp.
  5. Add the Rice:
    • Break up the rice and add it to the pan.
    • Stir-fry everything together, pressing rice into the pan to crisp slightly.
  6. Season:
    • Add soy sauce, oyster sauce (if using), black pepper, and salt.
    • Stir well to coat the rice evenly.
  7. Finish:
    • Add scrambled eggs back to the pan.
    • Toss in chopped green onions and mix everything well.
  8. Serve:
    • Serve hot as a main dish or a side with your favorite Asian meal.

🌟 Tips:

  • Cold rice prevents stickiness — spread freshly cooked rice on a tray to cool if in a rush.
  • Add a splash of fish sauce or sesame oil at the end for extra depth.
  • Great with leftover rotisserie chicken or grilled meats.
