- Make sure your rice is cold and not clumpy.
- Have all veggies chopped and ready.
- Cook the Eggs:
- Heat 1 tbsp oil in a large pan or wok over medium heat.
- Scramble the beaten eggs until just set. Remove and set aside.
- Sauté the Aromatics:
- Add the remaining oil to the pan.
- Sauté chopped onions for 1–2 minutes, then add garlic and cook until fragrant.
- Cook the Veggies:
- Add the mixed vegetables.
- Stir-fry for 2–3 minutes until tender-crisp.
- Add the Rice:
- Break up the rice and add it to the pan.
- Stir-fry everything together, pressing rice into the pan to crisp slightly.
- Season:
- Add soy sauce, oyster sauce (if using), black pepper, and salt.
- Stir well to coat the rice evenly.
- Finish:
- Add scrambled eggs back to the pan.
- Toss in chopped green onions and mix everything well.
- Serve:
- Serve hot as a main dish or a side with your favorite Asian meal.
🌟 Tips:
- Cold rice prevents stickiness — spread freshly cooked rice on a tray to cool if in a rush.
- Add a splash of fish sauce or sesame oil at the end for extra depth.
- Great with leftover rotisserie chicken or grilled meats.
